Recipe: Apricot Chicken

We made this for dinner on Wednesday!  It's a staple from my childhood and my mom dug it back out!  It came from one of the ladies in her beauty shop and the "Grandma" type recipes are always the best! Enjoy!

Apricot Chicken
4-6 Boneless, skinless chicken breast
1 8oz jar of apricot perserves
1 8oz bottle Russian salad dressing
1 pkg of onion soup mix, dry

Preheat oven to 350.  Mix all the ingredients together.  Place the chicken into a 9x13 pan. Pour over the apricot mixture.  Bake for about 1 hour or until chicken is tender.  Spoon some of the sauce over the chicken and serve!  

It is super yummy!

  1. This sounds yummy! I admire you for planning your meals so far in advance. I tend to change my mind every day, but hopefully planning one week at a time will help me stay on track. ;)

  2. Hi Rae, I am a procrastinator. I also am incredibly indecisive. Therefore, if there is a plan in place I will follow it!! I tried one week at a time and I found it easier to change my mind or go out to eat.

    I think the important thing is find what works for you and run with it!!!
